Healthy Shrimp Po Boys; Mardi Gras Lunch Recipe

I am always looking for ways to cut calories. I took a standard recipe and changed it up drastically to serve up Shrimp Po Boys with less fat and calories! It is still fried, but hey... I am no Paula Dean.

Ingredients:
Vegi oil
1/2 cup of skim milk
1 egg
1 lb. shrimp, deveined
3/4 cup flour
Seasoning (I like McCormick Seafood Seasoning)
French rolls
Shredded lettuce
Hot sauce
Lemon juice

Directions:
Heat up oil in a fry skillet.
Pull the tails off the shrimp.
Mix the milk and egg in one bowl.
Mix the flour and Seafood Seasoning in another bowl.
Drip the shrimp into the milk mixture. Remove.
Dip into the four mixture.
Coat shrimp.
Place shrimp into hot oil.
Fry shrimp on each side approx. 3 minutes until golden brown.

Place hot shrimp into paper towels and allow the excess oil to be soaked up by the paper towel.
Spit the french roll in half.
Fill with lettuce and shrimp.
On top of the shrimp give a dash of lemon juice and a dash of hot sauce! (Ass sliced tomatoe if desired)

*I eliminate the hot sauce for the kids or the kids just eat the shrimp only.
