Recipe Thursday: Sausage Rigatoni; Kid Friendly Dinner on A Budget


Ingredients:
3 cups of uncooked rigatoni pasta ( I buy in bluk at winco for under a $1)
1 pachage of suasage (I use John Morelli smoked sausage for under $1.89)
1 jar of pasta sauce (I use bertolli veggi blend ($1.68)
2 peppers (red, yellow, or orange... I grabbed what was on sale 2 for $1)
1/2 yellow onion (under 50 cents)
1 tbsp. minced garlic (optional)
1 tbsp. chopped fresh pasley (optional)


Directions:
Cut sausage into cubes and place into a non stick skillet.
Cut peppers and onion into small bite size pieces and place into non stick skillet (no oil needed. Add 1 tbsp water to help steam them)

In another pot, bring water to a boil.
Add noodles to boiling water; stir occasionally.
Fully cook sausage (if already cooked, fully heat it up).
Saute the peppers and onion until just barley tender. Add garlic (optional) and reduce heat to low.

When pasta is fully cooked, drain and add to the sausage skillet.
Pour on your favorite sauce, mix well.

*I served my kids at this point. They are not interested in eating peppers.

Mix in pepper and onion mixture.
Sprinkle on fresh parsley if desired (more for presentation than taste).
