Recipe Thursday: Tatertot Casserol

1 lb. Extra lean ground beef or turkey
1 onion finely chopped
1 package frozen spinach
1 can cream of chicken soup
2 tablespoons ketchup
1 small bag of tater tots
1 cup shredded Cheddar cheese

Brown beef with onion and frozen spinach.
Drain and fat.
Add ketchup, and soup. Mix well.
Pour mixture into lightly greased baking dish.
Sprinkle with cheese.
Add tater tots.
Bake at 425degrees for 30 minutes.

This was one of my favorite dished as a kid growing up. My mom used cream of mushroom soup which is standard, but not all kids (or adults like me) like mushrooms. I also choose to add the spinach because it does not alter the taste but does add nutrition.
