Fat Tuesday Breakfast; Vanilla Crepes In Honor Of Mardi Gras

In honor of Mardi Gras, I am sharing with you what we will be eating Tuesday morning on Fat Tuesday!

Ingredients:
1 1/2 cups of skim milk
2 egg yolks
3 tbs vanilla extract
1 1/2 cup flour
1 tbs sugar

Directions:
In a large bowl mix together the milk, vanilla, and egg yolk.
Add the flour and sugar; mix using a mixer. (it takes forever by hand)
Heat up an omelet pan (I turn my stove dial to 6).
Spray with non stick spray.
Pour 1/4 cup (or more if you prefer thicker crepes like me) batter into heated pan.
Swirl around so the entire pan is covered.
When bubbles form, flip it. (about 2-3 minutes)
Fill them up, roll them up, and EAT!

Fill your crepes with cream cheese and fresh fruit or just fresh fruit. You could fill them like my husband does (butter, lemon juice, and powdered sugar). Lastly, if these are a hit at breakfast, you could make them for desert and fill them with ice cream!

Happy Fat Tuesday!

Ingredients:
2 package of frozen spinach (unthawed)
6 eggs
1 1/2 cups milk (I use skim)
1 frozen pie crust
1/4 lb. cubed ham
2 cups shredded Swiss cheese

Directions:
Combine eggs, milk in a small bowl. Lightly stir.
Line the bottom of the pie crust with the spinach.
Sprinkle the cubed ham over the spinach.
Sprinkle the cheese over the ham.
Pour egg mixture evenly across the top.

Place the quiche on a baking sheet and bake at 375 degrees for 40 minutes or until set.

This cheesy dish is very quick to assemble and a great way to get the kiddos to eat some spinach!

Dr. Seuss Hat, Cat In The Hat Craft

In honor of Dr. Seuss's birthday, I'd like to share with you a simple craft: Dr. Seuss's Cat In The Hat Hat.

What you will need:
Scissors (scissors that cut straight or wavy work perfectly)
Glue
Paper
Pipe cleaners
Bells (optional)

Directions:
Using white constructions paper, tape two pieces together.
Tape the paper together to form a tube shape.
Cut out 5 strips of red paper.
Glue the red strips on.
Using a hole punch or the tip of an ink pen, punch through holes at the top of the hat.
Place the pipe cleaners into the holes and twist the end (inside the hat) to form a little ball. This will keep it from falling out.
Curl the pipe cleaner around your finger.
Add bells if desired.

Thanks for the tip, Mrs. Meacham
